I don’t know about where you live, but here in Illinois it has definitely felt like fall the last couple of mornings! With chillier weather coming soon, I thought I would share a favorite cold weather recipe with you – Broccoli and Rice Casserole. This dish is great any time of year, but I really love it during the cold months. It’s so warm and hearty, the perfect comfort food!

This recipe came from my mom. My mother-in-law, who gives me a lot of great recipes too, also has a good recipe for Broccoli and Rice Casserole. But, while it’s delicious, that recipe requires quite a few ingredients and time in the oven.
This recipe is fast and easy, and it’s made in a slow cooker. I love that it only has 5 ingredients!
Since it’s made in the crockpot, this Broccoli and Rice Casserole recipe is great for when you’re hosting a big holiday dinner. It saves space in your oven for other dishes.
This is certainly not a diet dish, but it works well for potlucks and other special events. I love using this slow cooker that has a locking lid. Makes it so easy to take the crockpot in the car, and not have to worry about the lid coming off during the drive.

Broccoli and Rice Casserole
Ingredients:
1 (2 lb.) package frozen broccoli
1 medium onion – chopped<
2 cans condensed cream of mushroom soup – (don’t add milk)
1 cup uncooked Minute Rice
1 small (8 oz.) jar of Cheez Whiz
Directions:
1. Combine all ingredients in crockpot.
2. Cook on high for about 4 hours.

I also grew up in Illinois and my mom made a similar casserole for Easter. It has a couple more ingredients, but we bake it in the oven. I just love this with ham. It has now become my dish to bring for the holidays.

Broccoli and Rice casserole is one of those foods that I just loved growing up. We don’t make it much anymore but this reminds me that I should!

Thanks for the recipe! I made this for dinner but roasted a head of garlic to add to it. I also transferred to a baking dish at the end and added French’s Fried Onions to the top and baked for 10 min at 350°. Yum!

Chelsea, maybe you could try cheddar cheese? Sorry, I’ve never tried it with anything other than the Cheez Whiz.

What do you think about adding some chicken to the recipe? My daughter loves chicken and broccoli casserole and this is just soooo easy! If you add the chicken (thinking like rotissorie) would you change the cooking time or add more fluid?

I would add the chicken cooked. The ham I added was cooked ham.
I want to bring this for thanksgiving. Do you think I should double it? If so should I add more cook time? Thanks!
Stephanie, it makes quite a bit. This recipe almost fills my crockpot, so I’m not sure you should double it, unless you make two batches in two crockpots. Good luck!
First time I had the is was at Grandma’s. I still love it. For the person who doesn’t like cheese whiz. put some cheddar in it. Before serving, add some sour cream. Don’t cook it with the sour cream in it.

While growing up my mom made this often. Sometimes she would substitute frozen spinach for the broccoli. I think I need to make some soon.
What size crockpot do you use for it?
Did you used condensed cream of mushroom or something like Progresso?

Do you have to use Minute rice? I have basmati long grain rice or some regular store brand long grain rice (the slow cook kind). If the long grain can be used, does the liquid need to be adjusted? This sounds great for my picky broccoli eaters and sooo easy!
I have only used minute rice, so I really don’t know if a slow cook rice would work or if you would need to adjust the liquid.

You would have to experiment with the recipe. I’ve only followed the recipe, and used frozen broccoli.
Is the oven a good alternative for the crockpot for this recipe?
Shernae, this is a crockpot recipe. If you would like to use the oven, then I would try to find Broccoli and Rice Casserole recipes that are made for the oven, and not the crockpot.
can you cook on low for longer? I put my crockpot on b4 I go to work and I’m gone 8-9 hours. My crockpot turns to warm after the cook time but I don’t know if that’s too long on warm???? What do you think?
I’ve only made the recipe as it is stated above. You could try it on low, and see what happens.

Yes, one cup rice is correct. I’m not sure exactly how many servings it makes. If I had to guess, about 8 servings.
One more ? Can I use chopped broccoli its what I have on hand ?
No, this crock pot recipe will only work with the frozen broccoli.
I have always made this in the oven, but even with 2 ovens, I need more space. I did as follows but i did put my onion and I did fresh celery in a pyrex measuring cup with a drizzle of olive oil and nuked it for 2 1/2 minutes twice covered in plastic wrap. Saves time from saute, I was also trying out a green bean casserole before TG and had a 1/2 of can of each left. cream of Mushroom, Chicken and Celery, so i used that in it with the cheese wiz. IT IS THE BOMB! It is so good, I will never make it in the oven again. Thank you so much for this crock pot recipe. Now, gonna try Cornbread dressing in a crock pot. Thanks again
