It’s been a while since I’ve shared a recipe with you, and this is a GOOD one!
This cranberry chicken recipe was given to me by a good friend, and it’s become a favorite of ours. I love chicken, and this is such a quick and easy recipe. You gotta love it when there’s only 3 ingredients in the sauce!
There will be a lot of cranberry “gravy” when you make this, and my husband and I love it on top of brown rice. Add a salad, and you’ve got a delicious, nutritious meal.
Cranberry Chicken Recipe
4-6 thawed chicken breasts – boneless and skinless
8 oz. catalina dressing – low fat or fat free work well
1 envelope of onion soup mix
1 can WHOLE berry cranberry sauce
Place chicken breasts in a 9″ x 13″ baking dish. Mix the catalina dressing, onion soup mix and cranberry sauce together in a bowl. Pour cranberry mixture on top of chicken breasts. Bake for 1 hour at 350 degrees.
When I make this for my husband and I, there are always leftovers. We like to have the remainder of the chicken cut up and mixed together with the cranberry mixture and brown rice. It makes a nice casserole.
It”s been my intention to try to figure out a way to do this recipe in the crock-pot. It’s on my list of things to do!
