Today I’m going to share with you an easy pizza recipe that my son made for us while he was home from California for the holidays. He very nicely offered to cook for us one night, and they were delicious!
While this may be old news to most of you, I had never seen pizzas made on pita bread before. The pita bread crusts sure made this a fast and easy recipe, which is my favorite kind!
I did not get pictures of the pizzas that my son made on Christmas eve, but recently my husband made them for us. So, these pictures are of his pizzas.
When my husband asked him for the recipe, my son said he doesn’t use exact measurements. He does it a little differently each time he makes them, but he tried to be as specific as possible with the amounts for us. You could change out the toppings to whatever you like. I think they would be good with pork sausage or pepperoni too.
1 lb. ground Italian sausage
1 red pepper
4 pitas – cut them in half to make 8 pizzas
Pizza or spaghetti sauce – we used about 1/2 of a 24 oz. jar
8 oz. shredded mozzarella cheese
8 oz. shredded cheddar cheese
(We had leftover cheese after making the 8 pizzas – not sure of exact amounts we used)
Dice the red pepper into small cubes. Brown the Italian sausage, adding in the red pepper to cook for the last 3-4 minutes.
Lay the pita bread halves on a cooking sheet. Top each half pita bread with two spoonfuls of pizza or spaghetti sauce.
Divide the sausage/peppers up evenly between the pizzas and place on top of the sauce.
Add 1-2 moderate handfuls of cheddar cheese and 1-2 moderate handfuls of mozzarella to each pizza.
Bake in oven at 400 degrees for 7-8 minutes. Just long enough to melt the cheese and crisp the crust without burning it.
